Overview of our farm
We are an organic farm that grows vegetables, rice, wheat, soybeans, and herbs in the Satoyama area of Makino Town, Takashima City, Shiga Prefecture.
We also cultivate log shiitake mushrooms, which are a specialty of Makino Town. There are two large Akita dogs, which are also the logo of Minakuchi Farm, and three horses.
We also operate ``CAFÉ TSUMUGU'', a satoyama restaurant that uses plenty of agricultural products from Minakuchi Farm, and ``NOHVA'', where you can interact with horses.
Our farm's commitment
Since I started farming in 2014, I have been growing crops without using pesticides or chemical fertilizers. Sawtooth oaks grown in the Satoyama area of Makino are used to cultivate shiitake mushrooms.
We practice circular agriculture by using chips made from crushed waste wood after cultivation as bedding for horses, composting it, and returning it to the fields for fertilizer.
We have obtained organic JAS certification for all agricultural products.

・About soy sauce
Organic soybeans and wheat grown by organic farmers are fermented and aged in wooden barrels. Enjoy traditional soy sauce with a strong taste.
・About Funazushi
Carp caught in Lake Biwa is carefully processed and marinated in wooden barrels with organic rice terraced rice. Enjoy your meal while imagining the traditional lifestyle of the people living in Satoyama and Satoko.
・About miso
Organic soybeans and terraced rice grown by organic farmers are fermented and aged in wooden barrels. Dried shiitake mushroom powder is mixed in with the ingredients during preparation to create a deeper richness and flavor.

This is an experience where you can make miso, a versatile seasoning that can be used in a variety of dishes, using carefully selected ingredients grown without pesticides by Minakuchi Farm.
Full of flavor, made with Mizukuguri soybeans, a native variety of Shiga Prefecture, grown on our own farm, Inochi no Ichi rice, grown in terraced rice fields, and powdered from raw wood shiitake mushrooms, also grown on our own farm. We will make miso for you. (Amount of finished miso is approximately 3kg)
Making your own miso will give you a special taste.
